The sunset from our terrace, according to a recent study of travelers’ favorite destinations,
turns out to be the fourth most beautiful in the world.

The name Mamma Caura, chosen to welcome our guests, is of very ancient origin: it is the term used by salt workers to indicate a gypsum-based sediment that accumulates every year on the bottom of the evaporating tanks -called caure- and is periodically taken out and removed from them. In a logic of circular economy ante litteram, which characterizes the activity, in the salt pans of the Trapani area, even the “mamma caura” is not eliminated, but reused as a natural and efficient material thanks to which we consolidate and waterproof the bottom and the banks of the ponds.

THE STRUCTURE

Derived from a historic barracks from the 1930s, once dedicated to the collection of salt duty, Mamma Caura was transformed in the 1990s into a facility open to the public, immediately enjoying great success. Completely renovated in 2021, today it is an exclusive sunset-bar located in the heart of the Ettore and Infersa Salt Pans: one of the most fascinating places in Sicily, where to experience an authentic sensory journey. Thanks to its privileged location, Mamma Caura offers a unique natural stage, perfectly exposed on the sunset. For those visiting Sicily for the first time, it is one of the must-see destinations, especially to admire the salt pans of Marsala in all their magic.

The experience is enhanced with the Mamma Caura Rooftop, located on the second floor: an exclusive space, ideal for those who wish to contemplate the sunset from above, in total tranquility. The atmosphere is made even more atmospheric by stylish details such as Nicola Mirenda’s (Njco) artistic ceramics, elegant furnishings and, of course, the incomparable spectacle of the sunset reflecting off the salt pans.

• One beverage of your choice: coffee, herbal tea, fresh-squeezed Sicilian citrus juice, fruit juice, or water
• One sweet item of your choice: Greek yogurt with dried fruit and honey, seasonal fruit, or a sweet croissant
• Savory dish: eggs (scrambled eggs/omelet with ham and mozzarella/fried eggs), crispy bacon, sausage, roasted tomatoes, French fries, toast.

Children’s Breakfast Menu €7 (ages 6–12):

Experience the magic of the sunset over the Mamma Caura salt flats with an exclusive aperitif at outdoor tables overlooking the lagoon. An experience that combines local flavors, signature cocktails, Sicilian wines, Champagne, and the unique atmosphere of one of Sicily’s most captivating sunsets.

TABLES OUTSIDE SALINE VIEW

By booking online, you’ll have access to the most exclusive front-row tables, with a privileged view of the salt flats and dedicated service to experience the sunset from a privileged position.

The aperitif includes a selection of gourmet finger foods:

  • Creamed cod beignets
  • crostini with shrimp and salt-water herbs
  • Bruschetta with tomato, almonds, mint, and tuna salami,
  • Tramezzino with buffalo mozzarella mousse and Sciacca anchovies
  • Oyster
  • Bruschetta with sea urchins.

From June to September, sunset is accompanied by a DJ set, while from July to early September, you can witness the evocative nighttime manual salt harvesting.

Saline View Restaurant Hall

Mamma Caura’s restaurant room, located on the second floor, is the ideal place to enjoy our dishes in every season. It is an air-conditioned, intimate and private environment that offers a unique panoramic view of the Ettore and Infersa Salt Pans and the majestic Mill. Upon request, the room can be reserved exclusively for corporate events, small groups or special occasions.

Featuring delicate shades of pink that evoke the colors of the salt flats, the dining room also hosts a captivating photographic exhibition dedicated to Sicily between 1903 and 1915, curated by Giacomo D’Alì Staiti (1888–1977).
*During the fall, the restaurant also hosts special dinner events for those who wish to enjoy a unique culinary experience.

Lunches and dinners have two shifts. It is possible that times may vary according to the season. It will be our pleasure to inform you during the reservation process.

The panoramic terrace overlooks the Hector and Infersa Salt Pans, which have been active and productive since Phoenician times (7th century B.C.) and the majestic 16th-century Windmill, a true jewel of industrial archaeology that is still fully functional today.

A testimony to an ancient and precious art, the production and harvesting of sea salt. From July to early September, it is possible to see the manual harvesting of sea salt while sipping aperitifs at sunset.

The terrace has limited seating, so you are advised to make reservations well in advance, and is uncovered.

There are breathtaking views with breathtaking sunsets. For those who wish to dine, it is possible to reserve a table in the dining room on the second floor.

Aperitif at the Rooftop

Enjoying an aperitif at the Rooftop Mamma Caura means indulging in an exclusive experience, suspended between the sky and the salt pans, at the most panoramic point of the entire complex. Here the sunset becomes the absolute protagonist: colors, reflections and scents come together in an atmosphere that has no equal.

Tasting Route

Savor a gastronomic journey created specifically to represent our territory: Florio Menu with 3 courses paired with their iconic wines, designed to enhance our culinary traditions.

You will be greeted by crostini of Sciacca anchovies, embellished with a salted butter with hand-picked Trapani IGP sea salt, flavored with lemon peel. This appetizer is accompanied by a glass of Vino Florio, which is the base wine for the production of the famous Marsala (fortified wine) typical of this area. A wine made from Grillo grapes with a unique flavor that goes perfectly with the anchovy crostini.

We continue with a traditional and flavorful dish: spaghetti spezzati in fish broth, a typical recipe that brings out the intense and authentic flavor of the Sicilian sea. To complete this dish, a glass of Marsala Vergine from Cantine Florio is served.

We then end the experience with the classic Sicilian dessert: the cannolo di ricotta, with its crispy wafer and sheep’s milk ricotta filling. The sweetest moment is accompanied by a glass of Marsala Semisecco from Cantine Florio.
